Change is tough - can I get an amen?! Even when you want it, even when you know it’s what’s best, even if you know it will be worth it in the end, change is scary. This week our kids started at a new school. While it could definitely be going worse, the transition has been far from easy. Moving them from the place and people they know was not an easy decision, but as parents we knew it had to be done. The weight of parenthood is real and unbearable at times - but I hope every parent can find peace knowing that we know what’s best for our little people and nobody can take as good of care of them as us. We are superheroes for the work we do as parents!

Playing with some vegan breakfast recipes and love this one!! Vegan Breakfast Bowl
1 package tofu, drained
1 small sweet potato
1/2 large tomato
1/2 bell pepper
2 cups spinach
1/2 tsp turmeric
1/2 tsp black pepper, ground
salt to taste
olive oil, for cooking
2 tbsp nutritional yeast
1/2 pkg soft tofu
1 tbsp non-dairy milk (almond, soy, etc)
Drain Tofu: Drain water from package and slice tofu width-wise into blocks; you should get about 8-12 pieces. Wrap these in a clean dish cloth (recommended) or paper towels (~8). Place them on a flat surface and top with something heavy (canned vegetables, recipe books, etc). Make sure enough weight is on all of the pieces to ensure the moisture is being squeezed out. Let sit for at least 10 minutes.
Saute Veggies: While tofu is draining, chop veggies into small chunks. Add sweet potato into medium sauce pan with 1/4 cup water and cover on medium heat, stirring occasionally. When water is evaporated, saute with a little olive oil until browned on both sides and soft. In another pan, saute mushrooms, bell pepper, and zucchini. When slightly browned add spinach and tomato. Heat until spinach is wilted. Set aside.
Make Cheese Sauce: Combine nutritional yeast, tofu, non-dairy milk, and salt into a food processor. Blend until creamy. Set aside.
Scramble Tofu Crumble tofu into saucepan with a drizzle of olive oil (the tofu should resemble scrambled eggs. Add turmeric, black pepper, and salt. Mix until well combined and heated (~1 minute). Add veggies and sweet potatoes. Mix for another minute until warm. Serve with cheese sauce and enjoy!

It has been one hell of a rollercoaster over the past 10 months and I’ve had some hiccups that made me think I was failing myself all over again. BUT I am proud to say that after sticking with my CBT course and continuously believing in myself, trusting that I’m doing an amazing job and of course surrounding myself with the most loving people I could have asked for... EXACTLY A WEEK AGO I WAS SIGNED OFF FROM MY CBT COURSE, COUNSELLING AND DOCTOR CHECK UPS 💃🏼🎉 Of course I know this isn’t going to stop me from ever having a bad day, of course I am, but I now have the skills to be able to face these shitty little things that life throws at me. I’ve come out from everything a stronger, more confident and fabulous version of myself. Your abdomen (or ‘abs’) is important to you. It is a big muscle that contains your stomach, liver and intestines, your kidneys and bladder, and your reproductive organs, and helps to protect them all. Keeping it in good shape can help you to look toned (it’s a good way to get a six-pack, in other words), and also to feel better in yourself.
Luckily, ab exercises are easy to do. The most popular is probably the ab crunch, which is when you lie flat on the floor, bend your legs and then touch your knees with your elbows. You can also try the simpler sit-up, which is the same thing, only putting your head between your knees each time instead. Which one you find easier will depend on your body – but it’s probably better for you if you practice whichever one you find the most difficult! This way you will tone-up your less-used muscles instead of focusing on ones that are already just fine.

I did my picture comparison a few days ago, so instead of updating basically the same thing (hah) thought I would just update my weight this week! Happy 20 weeks to me. Almost 5 months of this WOE.
