Wild rice and black beans cooked with taco seasoning, vegetable broth and garlic. Sauteed onions, garlic, jalapenos, brocolli, cauliflower, poblanos peppers, carrots, red & green cabbage & radish. Lots of aged cheddar cheese. All of this is stuffed into a whole wheat pita (way less additives then tortilla wraps), secured with toothpicks and baked in the oven. Served with a side of tortilla chips, fresh hot salsa, fresh mango salsa & cilantro. Drizzled with a sour cream sriracha lime aioli.

For those of you asking, I posted the link to this recipe in my bio. Recipe from @cookieandkate. My kids love it too. I added some black beans to the salad and chicken on top. And subbed the feta cheese for mozzarella. I’ve made it with feta too and love it. Yummy. 😍

Hello, and yet again I back with a nourish bowl. Literally I was so hungry and decided to just thrown in what I had in the fridge and freezer in a single bowl/plate. Including the poor attempt of an avocado rose. As you can tell I gave up😅. Anyway, I'm going to be completely honest, I haven't been feeling well, the past few days, dealing with personal problems. As much as that affects me, I'm still will be posting, since I love posting as much I can. Anyway I hope you enjoyed your day so far☺️❤️
Stats; baked sweet potato, marinated tofu, steamed broccoli, baby bell peppers, Japanese eggplant, and a avocado over a bed of spinach with hummus and nutritional yeast on the side.

Mac and “Cheese” With Borlotti Beans (Serves 5-6)
300 grams of cooked macaroni
1 teaspoon of cold-pressed extra-virgin olive oil
1 brown onion, peeled and diced
4 garlic cloves, peeled and diced
1 bunch of broccolini, stems removed
5 mushroom cups, sliced
1 cup of frozen peas
400 grams borlotti beans
2 cups vegetable broth
1 cup plant-based milk
4 tablespoons of nutritional yeast
1 teaspoon of turmeric
1/2 teaspoon of paprika
A couple of dashes of cayenne pepper
A couple of dashes of black pepper
3 tablespoons of wholemeal flour
A handful of chopped chives
4 spring onion leaves, chopped
Heat oil and cook onions and garlic until the onion is translucent. Add broccolini, mushrooms, and peas and cook until broccolini turns a dark green. Add beans and cook for a minute. Add broth, milk, nutritional yeast, turmeric, paprika, cayenne pepper, pepper, and wholemeal flour and continuously stir while waiting for the sauce to thicken. Ensure there are no lumps of flour in the sauce when stirring. Add chives and spring onion and cook for a minute. Stir in the cooked pasta. Serve with salad (lettuce, chopped kale, baby spinach, carrot, avocado, and cherry tomatoes).
