It’s #tacotuesday🌮 🎉 these are vegan pulled tofu tacquitos by the lovely @thevegansara created by freezing tofu to get that pulled meaty texture👏 Have you tried that technique before?? .
ALSO we’ll be the Union Street Farmer’s Market TOMORROW (Wednesday) from 4-7pm. You’ll be able to try our signature vegan cheese sauce AND we’ve got the best local kombucha on the tap! Perfect for refreshing in the hot sun ☀️ SEE YOU THERE 😊
What you need: 1 block of extra firm tofu (15oz), 1 tbl neutral oil, 2 tsp maple syrup, 1 1/2 tsp chili pepper, 1 1/2 tsp cumin, 1 1/4 tsp smoked paprika, 1 tsp garlic, 1 tsp salt, 1/4 tsp pepper, 8 6in soft flour tortillas, 1/2 cup salsa, 2 cups shredded vegan cheddar cheese.
1️⃣ Take out tofu from packaging, cut block in half, then cut each half in 3 slabs horizontally from its depth, giving you 6 pieces total. Wrap each slice in parchment paper, place in freezer safe container to freeze overnight
2️⃣ The Tofu will be yellow. No worries.Thaw to room temp on kitchen towel, then gently press each slab with a towel to get out water
3️⃣ Thinly slice each slab (does not need to be uniform) so it resembles pulled meat- and place in a large bowl, there will also be some crumbles which is fine. Drizzle oil and maple syrup and gently mix
4️⃣ In a small bowl combine all your spices, then add tofu to bowl
5️⃣ Spread tofu on large baking sheet lined with parchment paper that has been misted with oil . Bake at 375 F 15 min rotating and shaking pan every 5 min or so. After baking, place back in bowl & mix with salsa
6️⃣ To make tacquito, on tortilla, at the end closest to you, place 1 tbl cheese, next comes 1/4 cup tofu/salsa, then top with 1 tbl cheese. Roll tortilla tight, place seam side down, repeat.
7️⃣ On stovetop, using a non stick pan, working in batches, toast tortilla 6-7 min seam side down, flipping half way on med/high heat. Enjoy!!

I just learned from @medicalmedium that cherries remove toxins from the reproductive system and help to reduce fibroids and ovarian cysts. Also, look for the darkest ones, as they have the most healing benefits. If red cherries are coloured too lightly, it means the soil didn't have the optimal level of minerals.

Spicy Chickpea Omlette (high protein) 🔥
I ate a very good chickpea omlette recently from a restaurant and I couldn’t wait to try my own version of it! They make a lovely dinner variation from the normal routine 🤤
Chickpea flour comes in at 19g protein and 16g fibre per 100g 🌱💪🏼
✖️1 cup chickpea flour
✖️3/4 cup plant milk
✖️2 tsps cider vinegar
✖️2 good pinches baking soda
✖️1 tsp garlic powder
✖️1/2 tsp kala namak
✖️2 tbsps nooch
▪️mix everything. dry ingredients first then liquids. If batter is too thick, add some more plant milk slowly. Shouldn’t be too runny either. Let it sit for 10 mins. Cook like you would a pancake. Spread batter well for a thin layer omlette ▪️
For filling I put basil tofu, sliced kumato tomatoes, homemade cashew cream cheese which @julia.viola made yesterday and some sliced avocado. Topped with some sriracha sauce and chopped spring onions for that spice 🔥

I kicked ass in my 25 minute Core Speed workout! I shaved my legs🦵 I even slapped on a Leo inspired makeup look long enough to take a picture 😉
Before I actively started building my self esteem, I felt more confident at work when I filled my brows, out on sparkly eyeshadow, spend an hour in my eyeliner and topped it off with mascara. A face of makeup made it easier to be outspoken with customers and boosted my sales!
Now I do my makeup for me(when I decide to do it) and I feel the same with or without. My sales are determined by how real I am with my people, and I’m comfortable enough to show more than my bare face these days😂Thanks to a shift in my focus I can be my whole hearted Leo self. Confident and full of Fire🔥

This is one of the truest statements I've ever come across. When it comes to making lifestyle change, you will not succeed unless you decide to. You can't be forced or cajoled into it, because if your heart isn't in it, you'll just give up when things get hard.
But, when you've decided you're ready and you want to do something about your health, magic things happen.
All of a sudden you have this deep well of inner motivation you can tap into and draw from when things get tough.
You'll be making changes you want to make, instead of doing things you feel you have to.
So, instead of looking at the scale and saying "ugh, I need to do something about this" pay attention to how you feel. Is your body often sore and tired? Is your quality of life not where you want it to be? Are you suffering from some scary health issues? Are you concerned that your current lifestyle is robbing you of healthy years down the road?
These are things that delve beyond the surface. And these are often motivators for lasting lifestyle change. Feeling good in your body should be the goal. This can help you avoid harmful fad diets and focus on improving your health, one day at a time.

HOLY SHIT today has been a day of weather that all residents of Edinburgh have been waiting for.
