✨DELICIOUS “PEANUT” BUTTER CUPS✨
All you need to make them are 4 natural ingredients + Himalayan pink salt. (BONUS: These beauties make great Easter treats!)
STEP 1: PLACE 12 MUFFIN LINERS ON A BAKING SHEET
STEP 2: MAKE THE BASE
✅ 1/2 cup of organic sunflower seed butter
✅ 1 teaspoon of organic extra virgin coconut oil ✅ 2.5 - 3 tablespoons of pure organic maple syrup
DIRECTIONS: In a small saucepan, melt the sunflower seed butter and coconut oil over medium heat. Whisk until the mixture is smooth and creamy. Then, shut the heat off and whisk in the maple syrup. Divide the mixture evenly among the 12 cups (a bit over 1/2 a tablespoon per cup). Lastly, put the baking sheet with the cups in the freezer to set for at least 5 minutes.
STEP 3: MAKE THE CHOCOLATE TOP
✅ 1 cup of organic raw cacao powder
✅ 1/2 cup of organic extra virgin coconut oil
✅ 3 tablespoons of pure organic maple syrup
✅ Himalayan pink salt for sprinkling on top
DIRECTIONS: In a small saucepan, melt the coconut oil over medium heat and whisk in the cacao powder. Whisk until the mixture is smooth and creamy. Then, shut the heat off and whisk in the maple syrup. Remove the baking sheet from the freezer, divide the chocolate mixture evenly among the 12 cups (about 1 tablespoon per cup) and sprinkle a little Himalayan pink salt on top. Lastly, put the baking sheet back in the freezer to set for at least 10 minutes.
Store any leftovers in the refrigerator. Or, you can keep them frozen until it’s time to eat them.
They taste amazing!!! 😋

The #1 dressing that’s so good, you could drink it (kidding, but not really). In my opinion, the salad or power bowl is all about the dressing or the sauce. It gives the bowl of greens a little personality 💁♀️
Here’s my fave Thai dressing that I pour on everything (makes a lot of servings):
• 1/2 cup rice vinegar
• 1/4 cup sesame oil
• 1/4 cup almond butter (could sub 🥜)
• 1/4 cup raw honey
• 2 limes, juices
• 2 garlic cloves, grated
• 2 teaspoons grated fresh ginger (or 1/2 teaspoon ground ginger)
Before you say that’s too many ingredients ✋ My client who works 70 hours a week and doesn’t cook finds time to make this. If she can do it, you can too. It’s THAT GOOD #simplyswapped

I’m leaving out of town next week for a leadership retreat. With more creepy crud lurking I am making sure my immune system is strong. I am a caregiver to my Mom so I can’t get sick.
I will be putting this series of oils in a roller bottle as I find it easy to use to boost myself before I go and I can tuck it in my travel bag for my 2 days out of town.

On my dinner menu this week: chicken meatballs over cauliflower rice with a peanut coconut sauce 👩🏼🍳
I adapted a recipe from @ambitiouskitchen for this bowl! Here’s what I did:
1 pound 93% lean ground chicken (or lean ground turkey)
2 TBSP coconut flour
1/4 cup finely chopped green onion
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1/2 teaspoon salt
Freshly ground black pepper
1 tablespoon toasted sesame oil
For the peanut sauce:
1 (15 ounce) can light coconut milk
1/2 cup creamy natural peanut butter (just peanuts + salt)
2 tablespoons low-sodium soy sauce. .
Served over cauliflower rice with green peas and topped with green onion, chopped honey roasted peanuts and sesame seeds.

St. Patrick’s Day weekend is upon us, which means the green beer and spirits will be flowing like a gang of leprechauns through a dewy Irish meadowland. ☘️ Why not be the cool kid who indulges in a delicious green drink that tastes like a virgin pina colada, but instead of of taxing your liver, putting your kidneys and other organs under stress, inflaming your body and feeding a hangover...you give yourself a hearty dose of health after clinking your glass! 🍻
Here’s what’s in it:
✅1/2 cup of organic spinach
✅1/2 cup of organic cucumber slices
✅1/2 cup of frozen pineapple (Fresh pineapple works as well, but the drink won’t be as frothy or slushy.)
✅1 teaspoon of organic extra virgin coconut oil
✅The juice of 1 lime
✅1 cup of spring or purified water
Put all the ingredients in a high-powered blender and blend until creamy and smooth. Pour the mixture into a fun glass and enjoy!
Here are just a few of the health benefits provided by this delicious green drink: 🌱Spinach contains chlorella, which helps cleanse and increase the oxygen in your blood to improve the health of your cells. 🥒Cucumbers are made up mostly of water, which makes them very hydrating and able to help your body flush out toxins. They are a powerful antioxidant and a great source of vitamin B, potassium and magnesium which can help lower blood pressure and fight disease. 🍍Pineapples are loaded with bromelain, a powerful digestive enzyme that cleanses your colon and helps your body get rid of harmful bacteria. I know, MORE cookies. 🍪🍪 I’ve been on a bit of a kick working to develop a more nutrient dense YET also reasonably priced homemade cookie. Namely, trying to limit alternative, elusive flours and supplements that can cost serious $$, and sticking to stuff most folks already have on hand, or can easily pick up. These are peanut butter cookies made with oat flour (aka ground up oatmeal — very affordable!) And while very cost-effective, these... just weren’t very good. 😂 To be fair, I’m incredibly picky, but I gave these a generous 7. To the “Paul pile” they went. I’ll keep working on my health(ier), affordable cookies, but if you need something to tide you over in the meantime, check out my sea salt chocolate chip or cashew butter snickerdoodles on my feed. The average person applies over 300 chemicals to their body every.single.day. Scary, right? Most of them are from four things: soap, makeup, shampoo, and hair care. And the biggest pollutants in our home are fabric softener, dryer sheets, air fresheners, plug-ins, and candles 😬 Right!!
Even though these toxic chemicals are known to cause things like asthma and endocrine disruption. They’re still legal unfortunately, and all around us. And not everyone knows how dangerous it all is to their health.
The consequences of these toxic chemicals are really starting to be seen now. Health issues, low energy, depression, infertility... Sometimes we wait until something is wrong with us to fix it. But instead of waiting, wouldn’t you want to be preventative and make changes now so it doesn’t happen later?

So far for my power bowl challenge this week, my lunch has looked pretty much the same the past few days but I’m okay with that because it’s THAT good 👌 I’m thinking tomorrow I’ll add some roasted salmon for a power bowl din and maybe use some of these roasted veggies in an egg scramble. “Make it once, use it multiple ways” is always my motto, especially if you’re like me and cooking for one, which can get pretty boring sometimes. ✨ PS- putting the finishing touches on something that I think you’re going to love. When my hubby and I first started to workout our goal was to look a certain way. Six pack abs, get lean (for him bulk up) and get cut. We thought train hard & then trainer harder because we ate poorly! What happened with that mentally was we were obsessed, stressed, exhausted, got injured and hit a plateau because we didn’t listen to our body! We were slaves to fitness!
Once we changed our mindset and focused on being healthy & happy...the magic happened! The weight came off, we are stronger, and have more energy then ever before!
Our 2 favorite tips to getting healthy & happy!
#1 -Listen to your body!
Pay attention to:
-How you feel after your workout -You should feel energized (not like a truck hit you every time you workout)
-How you feel after eating a meal-You should feel great (not sluggish)
-Your hunger cues- Eat when you’re hungry, eat enough. DON’T eat when you are not hungry!
Keep your meals and workouts simple! Meaning they should be meals & workouts that fit your lifestyle realistically!

I have been loving simple meals like this lately! Easy to prep in advance and super satisfying... I like to mix up the ingredients I use, but always make sure to have a good source of protein, veggies, carbs and healthy fats This @eatbanza banza rice is one of my favorites because it’s made from chickpeas, so it’s higher in protein and fiber to help me feel more satisfied. Who’s all about superfoods and trying the newest health fads? I’ve always had an open mind towards food and am always curious about new nutrition tips, including 16oz of fresh celery juice first thing in the morning. I have really loved learning everything about the Epstein-Barr Virus and how our bacterial and viral loads might be at the root of many of the symptoms and disorders we hear about today. I’d much rather try celery juice than end up on antibiotics or medications! I recently attended the @nutritiouslifeofficial wellness event while in NYC and found myself *not* raising my hand when asked who regularly meal prepped. I hated the reality of my answer and often use the excuse of traveling, cooking for 1, or recipe testing far too often. Getting home on a Sunday vs. Monday ensured my meal prep game was going to be in tip top shape, especially since we have the #powerupwithpowerbowls challenge happening around here this week!
Here’s what I made in 1 hour:

How often do we wanna make some change but feel so unprepared that we just do nothing instead? 🙋 .
I remember having absolutely no clue what I was doing when I started our nutrition program. I'd been bombarded with fad diets, juice cleanses, Atkins, you name it... and honestly? I was just fricken exhausted 😞
So tired of feeling like crap all the time but never knowing exactly what I should be eating to fix it because one day carbs are bad and the next they're not. Cut fat... Oh wait fat is good! But what about sugar? Sugar is bad but fruit has sugar 🤔 I was done 🙅 .

Travel tip...check out healthy restaurants & menus ahead of time, make a plan for yourself so you are not winging it the whole time. This way, you come back home feeling good instead of yucky & sluggish. I am all about feeling my best! Fresh food & quality ingredients make us feel good and taste delicious!
