Guess what? I hate kale! 🥬 That’s right, I HATE it! But that’s ok because I love a variety of vegetables and my health isn’t going to decline because I don’t eat kale on a regular basis.
Want to know the key to eating lots of vegetables (or any nutritious food for that matter)? Prepare it in ways you enjoy!!!
I don’t love raw broccoli or cauliflower, but I LOVE them roasted in the oven.
Find ways to prepare vegetables in ways that you enjoy and then you’ll look forward to eating them! And your kids will probably eat them better too. 😉
So whether you like things raw, roasted, broiled, sautéed, mixed into a smoothie, or hidden in a sauce— eat them how you like! And then filling your day full of veggies won’t seem like such a chore!
Want to know my favorite way to prepare almost any veggie? Cut up in equal pieces, sprinkle with olive oil, smoked paprika, and garlic salt and roast in the oven at 350 degrees until tender. It’s so yummy on soooo many things! Sweet potatoes, zucchini, broccoli, cauliflower, green beans, yellow squash, brussels sprouts — you name it!
So next time you’re staring at your raw broccoli feeling underwhelmed, try something new!

Homemade cauliflower rice with egg, mushroom, peas, butternut squash and scallions. Seasoned with mushroom powder, garlic salt, rice vinegar, soy sauce, and tj’s everything seasoning.
This of course was just a side dish to dinner tonight, but definitely worth making. Took 15 mins total! So satisfying.

One of my favorite healthy breakfast spot @tinycupbkkthonglor with its well executed, good quality, and comforting food. Breakfast french toast is thick, fluffy, with no excessive oil or butter in it. Smoked salmon scrambled eggs is also dreamy; soft and silky eggs, not too salty salmon, and came with a complimentary bowl of salad to add some fiber and cut the rich flavor of the meal with its tangy balsamic dressing. Always have a pleasant start of the day with this place's food

Reeses Peanut Butter Blondie's
This is a recipe I found on Pinterest! You'll need:
3/4 cup butter
1/2 cup peanut butter
1 cup sugar
1/2 cup brown sugar
2tsp. Vanilla extract
2 cups flour
1tsp. Baking soda
About 30 Reese's minis
Chocolate for drizzle
Peanut butter for drizzle
Preheat oven to 350. Grease your chosen pan. In a bowl or stand mixer, mix butter, peanut butter, and sugars add eggs and vanilla extract until fluffy. Get a separate bowl and mix flour, salt and baking powder mix and add to wet ingredients. Transfer to pan. Press Reese's into batter and bake for 25-30 minutes. Drizzle chocolate and peanut butter and let cool. Enjoy!!

• H O L I D A Y F O O D. There’s something special about eating food on holiday right? It looks and tastes like relaxation. No need to cook if you don’t wanna (I do) and it’s (fingers crossed) usually eaten al fresco. I enjoy cooking on holiday as much as I do eating out in restaurants/tavernas/osterias. Hence while we always try to book out our own place with a kitchen. Tonight, in Venice, I made a classic Caprese salad to start. The BEST juicy tomatoes with creamy mozzarella and fresh basil, how green is that basil. And then I shallow fried some merluzzo (cod), accompanied by wilted spinach with loads of garlic and lemon. And then made some deep fried courgette flowers stuffed with ricotta and mint. They were great. Although I didn’t have scales or a measuring jug so the batter wasn’t perfect. I’ll forgive the Italian kitchen, and I’ll blame my lack of tools. Jeg spiser meget pizza for tiden (fordi pizza er livet). Men jeg spiser også meget rugbrød, spidskål, frugt, havregryn, peberfrugt og en hel masse gulerødder. Og så spiser jeg nogle bolsjer og noget chokolade og drikker vand og et glas rødvin og nyder livet og mærker efter, hvad jeg egentlig har lyst til.
At give sig selv lov til alt betyder virkelig ikke, at man så ender med at leve af pizza og chokolade resten af livet. Der kan måske være en periode, efter man har sluppet restriktionerne, hvor man automatisk vil spise mere og flere af de ting, man har forbudt sig selv. Men hvis man virkelig - helt oprigtigt og uden forbehold - insisterer på, at intet er forbudt, så vil det stabilisere sig. Og så vil man nå til et punkt, hvor både pizza og peberfrugt kan indgå side om side som lige gode fødevarer i en helt almindelig hverdag🍕🌶 Hvor det ene ikke er mere moralsk rigtigt end det andet, og hvor pizzaen ikke følges af dårlig samvittighed, og peberfrugten ikke ledsages af en tanke om at ‘være god’. Det er ikke sikkert, det sker fra den ene dag til den anden, og som med så meget andet kan det tage tid, og der vil være bump på vejen, tilbagefald og stædige tanker, der bliver ved med at dukke op.
Men det er hele rejsen værd🍕🥰 Det lover jeg🌸

You know why people love @mightytransformation? Because there is NO restriction.
There are some guidelines to follow but nothing rigid. Everything is super flexible.
You’ve heard me in the past say I don’t like to label food. I think it’s completely meaningless without context because you can absolutely still lose weight eating so called “junk food” and you could still gain weight eating so called “clean food”.
More importantly I often see people who label food have a bad relationship with it. This is common with new Mighty Transformation clients and it takes a while to break them out of this mindset.
In this pic are two different ways I look at food:
⬅️ on the left is how I used to label food in a negative way.
➡️ on the right is how I look at food NOW.
Very polarizing but I know my current view on the right is much more “healthy” in mindset. -
No more demonizing or putting myself down. No more thinking I need to run 5 million miles to burn it off.
Just get back on track the next day and as long as I am consistent most the time, I AM GOOD and why I am successful at staying in shape all year round. No more yo yo dieting!
One bad meal won’t make you fat just like eating one salad won’t make you lose weight. -
What you do consistently over the long term will determine your success or failure.

I’m always trying to find new ways to sneak vegetables into meals, so I’m constantly tweaking my recipes.
The egg white pizza is one of those that I eat regularly, and I wanted I way to find a way incorporate more vegetables without having a side salad.
I need simple. Doesn’t everyone? So This method is simple. I’ve been making this almost daily for about 2 months. Alexander even requests this! Bonus!👊🏼
Voila..... Spinach Egg White Pizza Crust.
-Use a dinner plate with a circular indention or a small round plate with a rim for 1/4 cup egg whites or a pie plate for 1/2 cup egg whites.
-Spray with olive oil.
-Chop 1 cup baby spinach and place on prepared plate. Cover. (I use a paper plate over my plate and press and seal wrap over my pie plate.) Cook on high 1 Minute.
-Pour egg whites over spinach. Season to taste. Cover. Cook on high 2 minutes.
-You can top it with anything you would put on an Italian style pizza or a Mexican Style pizza; or you can top it like it’s an omelet. Let you palate’s imagination run wild!😋

Vegetarian Egg Bake 🍃 Last Wednesday my husband brought home an extra 1.5 dozen eggs, giving us a whopping 3 dozen eggs! It was insane. I've been using them in different recipes all week, but this is by far my favorite. 12 eggs, 1/4 cup almond milk, a splash of water, 2 cups spinach, 1 zucchini, "Hashbrowns" which are actually just about 8 chopped up waffle fries, 1 cup mozarella cheese, topped with 1/3 cup of Monterrey Jack cheese. For seasoning I used sage, black pepper, salt, garlic powder and paprika. Cooked in a 9×13 pyrex on 350. 20 minutes, then sprinkle cheese on top and bake for 20 more mins. ✨ROSEMARY LEMON MARINADE✨
____Thank you for bearing with me while I took a little break from social media ‼️ life is crazy busy. I’m currently writing this post from my hotel room in Anaheim. I got certified in #boxingnbarbells last weekend, had a fun date with the hubby @misterkevchen at @paintingwithatwist and now I’m multitasking with preparing plans for the interns. But even though life is crazy busy for many of us, that doesn’t mean the healthy grind should stop. I had a delicious power bowl at the hotel cafe this morning after working out with quinoa, tomatoes, spinach egg and avocado. Keep your temple happy, fueled and healthy. Deets below on this delicious grilled chicken recipe •
INGREDIENTS: 3-4 fresh rosemary stalks, 1 tbsp olive or avocado oil, 2 tbsp lemon juice, 1/4 C chicken broth, 1 tbsp paprika, 1 tsp oregano, and salt/pepper •
1. Marinade your chicken for at least a couple hours - 24 hours for maximum flavor absorption. For the broccoli, tomatoes and potatoes - I roasted these bad boys on 450 degrees for about 15-20 minutes. The potatoes I smashed with a spoon after 20 minutes and kept roasting for another 10.
