KALE PESTO 〰️ this color. this flavor... it's just so good. ⠀⠀
I wanted a bright + creamy pesto that tasted rich without cheese and this is precisely that. I adapted the kale pesto recipe from @moroccochris x @bonappetitmag --- the results did not disappoint. ⠀⠀
Here's the recipe: ⠀⠀
1 head of Tuscan kale ⠀⠀
1 heaping cup of fresh basil ⠀⠀
1/3 cup pistachios ⠀⠀
1/4 cup olive oil ⠀⠀
4 garlic cloves⠀⠀
1/3 cup water⠀⠀
1/2 teaspoon salt ⠀⠀
First, blanch the kale. Remove the stems from the kale, bring some water to a boil (enough to be able to submerge kale) -- once boiling, add the kale leaves for 20-30 seconds until bright green in color. Remove from the water using tongs and set aside.⠀⠀
Add garlic, pistachios, olive oil, and 1/3 cup of water to a high speed blender. Blend until as smooth as possible. Then add the kale, basil, and salt and blend on high until smooth (I found I needed a few tablespoons of extra water while blending to get it to be super smooth) serve with your favorite pasta-- I used brown rice cappellini

🧂The Real Coconut Original Coconut Flour Tortilla Chips
🌟 8/10 These chips upon first taste rate closer to a 7/10, likely due to the letdown of expecting the taste of tortilla chips. Each bite gets progressively better, so don’t give up! The chip is quite dense and filling, so it is a challenge finishing a whole bag in one sitting. You can definitely tell these chips are made out of coconut flour. The pros are that they are not only gluten-free but also grain-free! Only downside is xantham gum is an ingredient. I’ve tried all of the flavors - original, bbq, salt and vinegar, and my preference is in that order.

REESES EGGS🤤(dairy free, refined sugar free, gluten free) .
When I found out I couldn’t have dairy anymore, I realized that meant I couldn’t have Reese’s, I was devastated! I’m happy to report that these are dairyfree, delish, and wayy better for you than the store bought. Not to mention they’re the perfect Easter treat!
1 cup all natural peanut butter
3 tbsp 100% maple syrup
10 tbsp blanched almond flour
1/2 tsp pink Himalayan salt
1 tsp vanilla
For choc coating
1 cup dairy-free choc chips
2 tsp coconut oil
1. Stir together all ingredients except choc coating. (No chocolate chips and coconut oil yet.)
2. Using your fingers form pb eggs.
3. Place on parchment paper and freeze for 10- 15 min.
4. Melt chocolate chips and coconut oil. Cover pb eggs in chocolate coating.
5. Place back on parchment paper and freeze. ENJOY! (Store in fridge or freezer in Tupperware!) *makes about 16-18 eggs.

Another quick & easy quarantine meal for ya!
Made this guy in about 20 minutes - 10 of which I spent watching Unorthodox on Netflix (highly recommend!)
Cauliflower gnocchi (from TJs)
1 bunch fresh kale
Marinara sauce (I love @raoshomemade or @thrivemarket organic)
Rotisserie chicken (or you can cook your own in crockpot)
Throw gnocchi in air fryer in an even layer, spray with avocado oil spray
Set at 400 for 20 mins
10 mins in, cut kale, toss in pan with avocado oil, salt, pepper
Add cooked gnocchi, kale, shredded chicken, and sauce to bowl & enjoy! 💚

Delicious Portabella mushrooms stuffed with zucchini, onions, garlic and pesto and topped with vegan cheese! Served it with quinoa cooked in veggie broth, a vegan sausage, lots of arugula, some baby tomatoes and more of the stuffing that didn’t fit into the mushrooms and topped everything off with lots of cilantro and chives 🌱💖

i scrolled through my feed today and all i saw was carrot cake. and i swore to myself i wouldn’t follow the crowd, i wouldn’t share carrot cake, whatever. and then i saw this post in my drafts and peer pressure won ☺️ little twist here though... because these are APPLE CARROT CAKE SNACKING BARS with MAPLE CREAM CHEESE FROSTING. yeeeeeah. your easter spread needs this one 🥺 recipe below xxxx
apple carrot cake snacking bars with maple cream cheese frosting (adapted form @minimalistbaker)
add 1 chopped apple and 3-4 chopped carrots to a food processor, pulse until fine, then set aside. clean out food processor.
blend the wet ingredients in the food processor until well-combined, then transfer to a mixing bowl
* 1 flax egg (2 Tbsp ground flaxseed meal + 5 tbsp water, let sit for 5 minutes)
* 1/4 cup olive oil * 1 mashed ripe banana
* 1/4 cup maple syrup
* splash of vanilla
in a separate bowl, mix the dry ingredients * salt
* 2/3 cup gluten-free oats
* pinch of baking powder
* 1 + 1/2 cup almond flour
pour the dry mix into the wet mix and stir by hand (i sort of folded mine) until a thick batter forms. then fold in the pulsed carrots/apples. pour batter into a greased brownie pan and bake at 350 for about 40 minutes. while that’s cooking, blend the frosting.
* 1 cup raw cashews (soaked overnight, then rinsed and drained)
* 1 tbsp coconut oil * 1/3 cup coconut milk
* 2 tbsp lemon juice
* 3 tbsp maple syrup
blend all ingredients in a food processor (i let mine run for about 3-4 minutes). pour into a tupperware or jar and place in fridge to set (about 2 hours). once cake is cooled, spread icing on top and place back in fridge for about a half hour to set. .

Date night dinner!! Baked pistachio, goat cheese, fig jam chicken. Impress your 🍯with this sweet and salty combo ❤️
1. 3-4 chicken tenderloins
2. 1/2 cup pistachios, crushed
3. 3-4 tbsps fig jam
4. 4 tbsps goat cheese
5. Salt and pepper
6. Cauliflower mashed potatoes
7. Olive oil
Get to cooking (swipe for steps):
1. Preheat oven to 425℉
2. Dip chicken tenderloins in olive oil and cover in pistachio crumbs, salt and pepper
3. Place goat cheese chunks on chicken and bake for 20 minutes
4. While baking, make cauliflower mashed potatoes to package directions
5. After baking, drizzle chicken with fig jam
6. Enjoy :)

Did anyone else looove scotcheroos growing up? Don’t get me wrong, regular rice krispie treats were good and everything, but these were next level🙌🏼 sooo I decided to make some in little muffin tins and they are so good!!🤩 I swear they take me right back to my childhood every time🤷🏽♀️
-1/2 cup peanut butter
-1/3 cup honey
-1 teaspoon vanilla
-2 1/2 cups rice cereal
-chocolate to cover
Start by heating pb, honey, and vanilla on the stove, stirring until smooth. Then stir in cereal until it’s all coated and press into muffin tins. Cover with as much melted chocolate as you’d like and place in freezer about 20 minutes or until they set.

EGG SHAPE MATCH 🥚 had these egg shape puzzles for over 3 years now. He never used to liked playing with them. Maybe he just wasn’t ready yet; they were a bit tight and hard to open & close. Until today 😍 He’s had a bit of trouble closing them, but he got the hang of it.
