We do a soup recipe after every time we cook a batch of chicken, we try to buy as much as possible bone-in skin-on chicken to have the benefits of bone broth and healthy fats ! Just make sure you cook your chicken on tons of onions and garlic and it is guaranteed it will be delicious !
Broccoli soup is one of our favourite ( if dairy is fine by you ) .

I made a chicken broth (with a base of garlic, ginger, chillis, spring onions, Shao Xing Chinese wine, soy sauce and sugar) with pork and cabbage dumplings, rice noodles, bok choy and topped with the mandatory fried shallots, chilli and coriander which I love so much. ❤

When you're feeding toddlers, like me, you learn to cram as much nutrients as possible into every meal or snack. Sometimes you have to hide it in there.
I put a couple of organic chicken frames in the slow cooker for 48 hours. Strain out all the chunky bits, making sure I keep the fat, and freeze it into cubes, silicon muffin trays, anything I can find really. And because clear chicken broth has such a neutral taste, you can add it to almost anything. Sweet or savory.
It's full of amazing minerals and fat soluble vitamins just to name a couple. And it's fantastic at healing the gut wall.
One of the best traditions in healing with food.

Dele3 w/ rice ~ - Fry breast chicken in a bit of oil in saucepan until golden on both sides. - Add water to the chicken and bring to boil. - Once its cooked, remove chicken out of water, sieve the water/chicken stock to make sure it is clean. Peal the chicken into smaller pieces. - Add a teaspoon of tumeric, a teaspoon of curry powder, a teaspoon of vegetable stock into the water. Add salt and lemon to taste and place the chicken into the soup. Leave to boil. - Enjoy with rice. 😊

Organic Bone Broth Pho with Kelp Noodles
1 litre Organic Beef broth
500ml Organic Chicken bone broth
60ml Fish sauce
100g Organic coconut sugar
2 Limes (1 for juice and 1 for wedges)
20g Ginger (finely grated)
20g Turmeric (finely grated)
1 clove garlic (finely grated)
2 medium Chiliies (thinly sliced)
4 spring Onions (thinly sliced)
2 Cinnamon Quills
3 Star Anise
1 bunch Coriander (picked leaves, thinly slice roots)
1 bunch Thai Basil (picked)
1 bunch Vietnamese mint (picked)
250g Bean shoots
1/2 bunch Kale (shredded)
1 Carrot (julienne)
6 Radishes (thinly sliced)
500g Kelp noodles
400g Organic Beef Sirloin (optional)
- Combine the Chicken and Beef bone broth, star anise and cinnamon quills in a saucepan on stovetop and heat to a gentle simmer
- Add Ginger, turmeric, garlic, coconut sugar, fish sauce and coriander roots and simmer very gently for 10-12 minutes
- While broth is simmering soften your kelp noodles in a bowl of warm water, strain and divide them evenly between 4 soup bowls
- Divide the carrot, radish, kale and beef between the 4 bowls - Remove broth from heat, remove staranise and cinnamon quill from broth, add one of the sliced chillies and the lime juice
- Pour one quarter of the broth into each bowl, leave for 3-4 minutes for the vegetables to soften
- Garnish with bean shoots, fresh herbs, sliced chilli, spring onions and a wedge of lime

Dulu jamannya Raheesa masih MPASI gue sering bikin kaldu Chicken broth utk tambahan di bubur nya. ternyata pas gue searching selain chicken broth juga ada chicken stock.
nah, bedanya chicken broth dan chicken stock sebenernya gk beda banyak sih. kalo chicken broth adalah rebusan daging ayam yg ditambahin garam dan bumbu2 lainnya seperti bawang putih, Bombay, daun salam, seledri dan daun bawang dan di rebusnya sekitar 2-3 jam. hasilnya lebih encer dan agak bening.
sedangkan chicken stock yang direbus adalah ayam dengan tulang2 nya, di campur dengan bahan lain seperti wortel, bawang putih, bawang Bombay, daun salam, seledri, dan daun bawang direbus kurleb 6 jam sampai menghasilkan kaldu yg kental, kekuning-kuningan dan kalo dimasukin ke kulkas berubah jadi jelly Krn chicken stock lebih banyak mengandung kolagen dari tulang ayam. dan rasanya lebih rich dari chicken broth.
tapi manfaatnya tetap sama sih, tergantung mau nya bikin yang stock atau yg broth 😂 aroma kaldunya gile.... wangi bener pengen gue sruput deh pake sedotan 😂
dan berhubung dedek Biya hari ini udah 7 bulan, maka gue langsung bikin MPASI nya pake beras, wortel, ayam kampung dan tambahan kaldu ayam yg gue bikin. Alhamdulillah makannya lahap sampe habis 😋😋 Tadi gue bikin pake ayam kampung pejantan (bukan pejantan tangguh ya 😂) 2 ekor, 2 buah Bombay, 6 siung balut, daun salam, wortel 2 buah, daun bawang n seledri secukupnya.
tips nya kalo mau bikin kasih airnya langsung banyak, jadi pas di perjalanan gk nambah2in air lagi, biar hasilnya berwarna kekuningan cakep gitu.
dan kalo bikin cari ayamnya yg masih seger bugar kalo bisa yg agak tuaan biar banyak Sari Pati nya.
